Ingredients

  • 2 cups granulated sugar
  • 1 cup water
  • 1/2 cup corn syrup
  • 1/4 cup fresh fruit such as raspberries, blueberries, or strawberries
  • 1/4 cup edible flowers like violas or pansies
  • Food coloring (optional)

Instructions

  1. Combine the sugar, water, and corn syrup in a medium saucepan and place it over medium heat, stirring until the sugar has dissolved.
  2. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10-15 minutes, or until the mixture reaches 300°F on a candy thermometer.
  3. Remove the saucepan from the heat and let it cool slightly, until the mixture reaches 275°F.
  4. Add the fresh fruit and edible flowers to the mixture and stir gently to combine.
  5. Add a few drops of food coloring to the mixture if desired, and stir to combine.
  6. Pour the mixture into a lollipop mold or a silicone candy mold, and let it cool and set at room temperature for at least 30 minutes.
  7. Once the lollipops have set, remove them from the mold and enjoy!
Recipe Note: Store the lollipops in an airtight container at room temperature for up to 2 weeks, or wrap them individually in plastic wrap or cellophane and store them in the freezer for up to 2 months
