Ingredients

  • 1 cup pineapple juice
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon agar agar powder
  • 1/4 teaspoon natural food coloring
  • 1/4 cup toasted coconut flakes

Instructions

  1. In a small saucepan, combine the pineapple juice, sugar, and water. Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved.
  2. In a separate bowl, sprinkle the agar agar powder over 1/4 cup of water and let it sit for 5 minutes to allow it to bloom.
  3. Add the bloomed agar agar to the pineapple juice mixture and stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat to low and simmer for 5 minutes.
  5. Remove the saucepan from the heat and stir in the natural food coloring.
  6. Pour the mixture into a silicone ice cube tray and refrigerate for at least 10 minutes to set.
  7. Once the gummies have set, remove them from the ice cube tray and roll them in toasted coconut flakes to coat.
Recipe Note: Store the gummy cubes in an airtight container in the refrigerator for up to 2 weeks
