Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup confectioner's sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup puff pastry, thawed
  • 1 cup caramelized sugar (see note)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2. Roll out the puff pastry to a thickness of about 1/8 inch. Cut into 12 equal rectangles.
  3. 3. In a medium bowl, whisk together the granulated sugar, confectioner's sugar, flour, and salt.
  4. 4. In a separate bowl, whisk together the softened butter, whole milk, eggs, and vanilla extract.
  5. 5. Add the dry ingredients to the wet ingredients and whisk until smooth.
  6. 6. Spread a layer of pastry cream on each rectangle of puff pastry, leaving a 1/2 inch border around the edges.
  7. 7. Top each rectangle with a layer of caramelized sugar.
  8. 8. Repeat the layers two more times, ending with a layer of puff pastry on top.
  9. 9. Bake the mille-feuille for 25-30 minutes, or until the pastry is golden brown.
Recipe Note: Store the mille-feuille in an airtight container in the refrigerator for up to 3 days. Allow the pastry to come to room temperature before serving.
