Layered Mille-Feuille Confectionery Cake with Caramel and Nougatine
Ingredients
- 1 1/2 cups puff pastry, thawed
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/2 cup water
- 1/4 cup unsalted butter, softened
- 1/2 cup nougatine, crushed
- 1 cup caramel sauce, warmed
- 1 cup confectioners' sugar
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry to a thickness of about 1/8 inch. Cut into 12 equal rectangles, about 4 inches wide and 6 inches long.
- In a small saucepan, combine the granulated sugar, corn syrup, and water. Place over medium heat and cook, stirring occasionally, until the sugar dissolves.
- Bring the sugar mixture to a boil, then reduce the heat to medium-low and simmer for about 10 minutes, or until the caramel turns a deep amber color.
- Remove the caramel from the heat and stir in the softened butter until melted. Stir in the crushed nougatine and warmed caramel sauce.
- To assemble the cake, place a layer of puff pastry on a serving plate. Brush with a little bit of the caramel mixture, then sprinkle with a pinch of confectioners' sugar. Repeat this process, creating 12 layers in total, finishing with a layer of puff pastry on top.
- Drizzle the top of the cake with the remaining caramel mixture and sprinkle with a pinch of confectioners' sugar. Refrigerate for at least 30 minutes to allow the flavors to meld together.
