Ingredients

  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (60g) unsalted butter
  • 1 teaspoon pure vanilla extract
  • 1 cup (120g) dark chocolate chips (at least 60% cocoa)
  • 1/2 cup (60g) salted toffee bits
  • 1/2 cup (60g) chopped pecans
  • Pinch of flaky sea salt

Instructions

  1. Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a medium saucepan, combine the sugar, heavy cream, and butter. Place the saucepan over medium heat and cook, stirring occasionally, until the sugar has dissolved.
  3. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10 minutes, or until the fudge reaches 235°F on a candy thermometer.
  4. Remove the saucepan from the heat and stir in the vanilla extract. Let it cool slightly until it reaches 115°F.
  5. Melt the dark chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth. Pour the melted chocolate into the fudge mixture and stir until well combined.
  6. Stir in the salted toffee bits and chopped pecans. Pour the fudge mixture into the prepared baking dish and smooth the top.
  7. Sprinkle a pinch of flaky sea salt over the top of the fudge. Let it cool to room temperature, then refrigerate until set, about 2 hours.
  8. Cut into squares and serve. For a cleaner cut, dip the knife in hot water and wipe dry between cuts.
Recipe Note: Store the fudge in an airtight container in the refrigerator for up to 2 weeks. For longer storage, wrap tightly and freeze for up to 3 months.
