Caramels are a classic confectionery treat that can be elevated to new heights with the addition of unique flavor combinations and textures. In this recipe, we'll explore the art of crafting smoked sea salt caramels with fleur de sel and toffee crunch, a perfect blend of savory and sweet. The smokiness of the sea salt pairs beautifully with the delicate flavor of fleur de sel, while the toffee crunch adds a satisfying texture to these indulgent treats.
To begin, it's essential to understand the basics of caramel making. Caramels are created by heating sugar to a high temperature, causing it to turn a deep amber color and develop a rich, caramelized flavor. The process requires patience and attention to detail, as the sugar can quickly go from perfectly caramelized to burnt and unusable.
In addition to the caramel itself, the smoked sea salt and fleur de sel play a crucial role in the flavor profile of these treats. Smoked sea salt adds a deep, smoky flavor that complements the sweetness of the caramel, while fleur de sel provides a delicate, flaky texture and a touch of saltiness. The toffee crunch, made from crushed toffee bits, adds a satisfying texture and a burst of buttery flavor to each caramel.

Crafting Smoked Sea Salt Caramels with Fleur de Sel and Toffee Crunch
Ingredients
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 1/2 tsp smoked sea salt
- 1/4 tsp fleur de sel
- 1/2 cup crushed toffee bits
Instructions
- Combine the sugar, corn syrup, and 1/4 cup of the heavy cream in a medium saucepan and place over medium heat, stirring until the sugar has dissolved.
- Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10-12 minutes, or until the caramel turns a deep amber color.
- Remove the saucepan from the heat and slowly pour in the remaining 1/4 cup of heavy cream, stirring constantly to avoid splashing.
- Return the saucepan to medium heat and cook for an additional 2-3 minutes, or until the caramel has thickened slightly.
- Stir in the vanilla extract, smoked sea salt, and fleur de sel, then pour the caramel onto a parchment-lined baking sheet.
- Allow the caramel to cool and set at room temperature for at least 30 minutes, then sprinkle with crushed toffee bits and break into pieces.
- Melt the caramel in a double boiler or in the microwave in 30-second increments, stirring between each interval, until smooth and pliable, then shape into desired forms and let set at room temperature
