Spun Sugar Lollipops with Citrus and Honey
Ingredients
- 1 cup granulated sugar
- 1/2 cup water
- 1/4 cup honey
- 1/4 cup freshly squeezed citrus juice (such as lemon or orange)
- 1 tablespoon grated citrus zest (such as lemon or orange)
- Food coloring (optional)
- Lollipop molds or sticks
Instructions
- Combine the sugar, water, and honey in a small saucepan and place it over medium heat. Stir until the sugar has dissolved, then bring the mixture to a boil.
- Use a candy thermometer to monitor the temperature of the mixture. Once it reaches 300°F, remove it from the heat and let it cool slightly.
- Add the citrus juice and zest to the mixture and stir to combine. If desired, add a few drops of food coloring to tint the lollipops.
- Allow the mixture to cool and thicken slightly, until it reaches 275°F. This should take about 5-10 minutes, depending on the temperature of your workspace.
