Summer Breeze Lollipops with Fresh Fruit and Herbs
Ingredients
- 2 cups granulated sugar
- 1 cup water
- 1/2 cup fresh raspberry puree
- 1/4 cup fresh blueberry puree
- 1/4 cup chopped fresh mint leaves
- Food coloring (optional)
Instructions
- Combine the sugar and water in a medium saucepan and place over medium heat, stirring until the sugar has dissolved.
- Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10 minutes, or until the mixture reaches 300°F on a candy thermometer.
- Remove the saucepan from the heat and carefully pour in the fruit purees and chopped mint leaves. The mixture will bubble up and steam vigorously, so be careful not to splash any of the hot candy.
- Let the mixture cool slightly, until it reaches 275°F. This should only take a few minutes.
- Add a few drops of food coloring to the mixture, if desired, and stir to combine.
- Pour the mixture into a lollipop mold, making sure to fill each cavity to the top.
- Let the lollipops cool and harden completely, which should take about 20-30 minutes. Once hardened, remove the lollipops from the mold and enjoy!
