Ingredients

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup peanuts
  • 1 cup milk chocolate chips
  • 1 teaspoon sea salt

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. Combine the sugar, corn syrup, and water in a medium saucepan and place over medium heat, stirring until the sugar has dissolved.
  3. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10-12 minutes, or until the caramel turns a deep amber color.
  4. Remove the saucepan from the heat and stir in the butter and vanilla extract until melted and smooth.
  5. Add the peanuts to the saucepan and stir until they are evenly coated with the caramel mixture.
  6. Pour the caramel mixture onto the prepared baking sheet and spread into a thin layer.
  7. Allow the caramel to cool and set at room temperature for at least 30 minutes.
  8. Melt the chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
  9. Break the cooled caramel into small clusters and dip each cluster into the melted chocolate, tapping off any excess chocolate.
  10. Place the chocolate-covered caramel clusters on a piece of parchment paper and sprinkle with sea salt.
  11. Refrigerate the clusters for at least 30 minutes to set the chocolate.
