Shortbread cookies are a classic favorite, and when paired with the richness of chocolate and the crunch of caramelized hazelnuts, they become an irresistible treat. This recipe combines the simplicity of shortbread with the elegance of chocolate dipping and the added texture of caramelized nuts.

To achieve the perfect caramelization on the hazelnuts, it's essential to cook them slowly over low heat, stirring frequently to prevent burning. This process brings out the deep, nutty flavor that complements the shortbread and chocolate beautifully.

The key to a successful chocolate dip is in the tempering. Tempering chocolate gives it a smooth, glossy finish and a satisfying snap when broken. For this recipe, we'll be using a simple method of tempering that doesn't require any special equipment, making it accessible to bakers of all levels.

Ingredients

  • 1 1/2 sticks unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup hazelnuts
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream the butter and sugar until light and fluffy. Add the flour and salt, mixing until the dough comes together.
  3. Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Cut into desired shapes and place on the prepared baking sheet.
  4. Bake for 18-20 minutes, or until the edges are lightly golden. Allow the cookies to cool completely on the baking sheet.
  5. To caramelize the hazelnuts, heat a skillet over medium-low heat. Add the hazelnuts and cook, stirring frequently, for about 10-12 minutes, or until fragrant and golden brown.
  6. Melt the chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
  7. Dip the cooled shortbread cookies into the melted chocolate, using a fork to fully coat each cookie. Immediately sprinkle with caramelized hazelnuts.
  8. Place the dipped cookies on a piece of parchment paper or a silicone mat. Refrigerate for at least 30 minutes to set the chocolate.
Recipe Note: Store the cookies in an airtight container at room temperature for up to 5 days.
