Ingredients

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1/4 cup honey
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup freshly squeezed orange juice
  • 1 tablespoon unflavored gelatin
  • 1 teaspoon citrus extract
  • Edible glitter in various colors

Instructions

  1. Combine the sugar, corn syrup, and water in a medium saucepan and place it over medium heat, stirring until the sugar has dissolved.
  2. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10 minutes, or until the mixture reaches 300°F on a candy thermometer.
  3. Remove the saucepan from the heat and carefully pour in the honey, lemon juice, lime juice, and orange juice. The mixture will bubble up and steam vigorously, so be careful not to splash any of the hot liquid.
  4. Add the gelatin and citrus extract to the mixture and stir until they are fully dissolved.
  5. Allow the mixture to cool slightly, until it reaches 275°F. This should take about 5-10 minutes, depending on the temperature of your kitchen.
  6. Once the mixture has cooled, add a few drops of food coloring to tint the lollipops, if desired. Stir well to combine.
  7. Pour the mixture into a lollipop mold or a silicone candy mold. If using a lollipop mold, insert a lollipop stick into each cavity before pouring in the mixture.
  8. Allow the lollipops to cool and set at room temperature for at least 30 minutes. Once set, remove them from the mold and sprinkle with edible glitter.
  9. Serve the sparkling citrus lollipops immediately, or store them in an airtight container at room temperature for up to 2 weeks.
Recipe Note: Store the lollipops in an airtight container at room temperature for up to 2 weeks.
