Lollipops have been a beloved treat for generations, with their bright colors and enticing flavors captivating both children and adults alike. One of the most iconic types of lollipops is the swirled variety, where two or more colors are blended together to create a unique and eye-catching design.

In this recipe, we will be making vintage-style swirled lollipops with a refreshing combination of lemon and cherry flavors. These lollipops are perfect for special occasions, such as parties or gift-giving, and can be customized with different flavor combinations to suit your taste preferences.

To achieve the signature swirled effect, we will be using a technique called "layering," where two separate batches of colored sugar syrup are poured into a lollipop mold in a specific pattern. This technique requires some practice to master, but the end result is well worth the effort.

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1 tablespoon cherry juice
  • Food coloring (red and yellow)
  • Lollipop molds and sticks

Instructions

  1. Combine the sugar, corn syrup, and water in a medium saucepan and place it over medium heat, stirring until the sugar has dissolved.
  2. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10 minutes, or until the mixture reaches 300°F on a candy thermometer.
  3. Remove the saucepan from the heat and carefully pour in the lemon and cherry juices, stirring to combine.
  4. Divide the mixture into two separate bowls and add a few drops of yellow food coloring to one bowl and red food coloring to the other bowl, stirring to combine.
  5. Pour a small amount of the yellow mixture into the bottom of each lollipop mold, followed by a small amount of the red mixture, creating a swirled effect.
  6. Repeat the layering process until the molds are filled to the top, then insert a lollipop stick into each mold and allow the lollipops to cool and harden completely.
  7. Once the lollipops have hardened, remove them from the molds and serve immediately, or store them in an airtight container at room temperature for up to 2 weeks.
